Ingredients:

  • 4-6 boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup honey
  • 1/4 cup brown sugar

  • 1/4 cup pineapple juice
  • 3 tablespoons rice vinegar
  • 2 tablespoons minced garlic
  • 1 tablespoon grated ginger
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • Sesame seeds and chopped green onions for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. In a bowl, whisk together soy sauce, ketchup, honey, brown sugar, pineapple juice, rice vinegar, minced garlic, grated ginger, sesame oil, and black pepper. This will be your Huli Huli sauce.

  3. Place the chicken thighs in a large zip-top bag or shallow dish. Pour half of the Huli Huli sauce over the chicken, ensuring it's well coated. Marinate the chicken in the refrigerator for at least 30 minutes, or preferably, a few hours to let the flavors infuse.

  4. Reserve the remaining half of the Huli Huli sauce for basting.

  5. Line a baking dish with foil and place a wire rack on top. Arrange the marinated chicken thighs on the rack.

  6. Bake the chicken in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 165°F (74°C). Baste the chicken with the reserved Huli Huli sauce every 10 minutes during baking.

  7. If desired, you can broil the chicken for an additional 2-3 minutes at the end to get a caramelized finish.

  8. Once cooked, garnish with sesame seeds and chopped green onions.

  9. Serve the Baked Huli Huli Chicken over rice or with your favorite side dishes.
